Serves 6-8 as a snack
1 cinnamon stick
1 tsp whole cloves
300g fresh dates, pitted
180ml Bertolli Organic Balsamic Vinegar
60g brown sugar
1 tsp salt
2 tbsp Bertolli Organic Extra Virgin Olive Oil Fruity Taste
Vintage cheddar and crackers, to serve
STEP 1
Place cinnamon and cloves in a small muslin cloth. Tie with kitchen string to form a parcel.
STEP 2
Combine dates, Bertolli Organic Balsamic Vinegar, sugar, salt & Bertolli Organic Extra Virgin Olive Oil Fruity Taste in a saucepan over medium heat.
STEP 3
Add the spice parcel and cook, stirring, for 3-4 minutes or until mixture comes to the boil.
STEP 4
Reduce heat to low and simmer, partially covered, stirring occasionally for 20 minutes or until dates are soft and mixture thick.
STEP 5
Remove from heat and allow to cool to room temperature.
STEP 6
Remove and discard spice parcel.
STEP 7
Serve accompanied with a sharp cheddar and crackers.
