Dark Chocolate Mug Cake

You will need a 375ml capacity mug for this recipe
4 Tbsp Plain Flour
4 Tbsp Caster Sugar
2 Tbsp Cocoa Powder
½ Tsp Baking powder
4 Tbsp Coconut Milk
1 Tbsp Bertolli Organic Extra Virgin Olive Oil
¼ Tsp Vanilla Bean Paste
Pinch sea salt
Dark chocolate squares, plus extra to decorate
Icing sugar, to dust
STEP 1
In the mug mix all ingredients (except chocolate squares) until combined.
STEP 2
Poke the chocolate squares into the centre of the mug.
STEP 3
Microwave on HIGH for 90 seconds to 2 minutes or until the cake rises and is springy and spongey when the surface is pressed.
STEP 4
Allow the mug cake to cool slightly before dusting with icing sugar to serve.
