Grilled Salmon with Green Herb Sauce
4 x Salmon fillets
1 Tbsp Bertolli Classic Olive Oil
1/3 Cup flat leaf parsley
1/3 Cup basil leaves
1 Tbsp baby capers, rinsed and drained
Finely grated zest from ½ lemon
Juice from ½ lemon
60ml Bertolli Classic Olive Oil
Sea salt and freshly cracked black pepper
To make green herb sauce, place parsley, basil leaves, capers and lemon zest on a chopping board and chop together until combined and very finely chopped.
Transfer to a bowl and whisk together lemon juice, Bertolli Classic Olive Oil, salt and pepper.
To prepare salmon, heat the Bertolli Classic Olive Oil in a large frypan over medium heat.
Add salmon fillets and cook for 2-3 minutes until the skin is crispy.
Carefully flip the salmon fillet and cook for a further 2-3 minutes or until cooked through.
Serve grilled salmon with green herbed sauce spooned over the top.
