Mint Bliss Balls

250g pitted Medjool dates
90g Almond Meal 40g Desiccated Coconut, plus extra to decorate
40g Raw Cacao Powder, plus extra to decorate
½ Tbsp Bertolli Gentile Olive Oil
2 Tsp Peppermint Essence
2 Tbsp Cacoa Nibs

METHOD

STEP 1

Combine dates, almond meal, coconut, cacao, Bertolli Gentile Olive Oil and essence in a food processor.

STEP 2

Blend for 2 minutes or until smooth. Add cacao nibs and blend for a further 20 seconds, to combine.

STEP 3

Divide mixture into 24 portions (1 tbsp each).

STEP 4

Roll into balls then roll in different toppings (desiccated coconut, cacao powder or cacao nibs).

STEP 5

Refrigerate for 2 hours before serving.
