Serves 8-10 as a snack
2 tbsp capers, roughly chopped
2 anchovy fillets, finely chopped
2 cloves garlic, crushed
2 sprigs thyme, leaves picked
1 tbsp fried garlic (we used store bought)
1 tsp dried oregano
1 tbsp finely grated parmesan
Sea salt and freshly cracked black pepper
Pinch chilli flakes
250ml Bertolli Organic Robusto Extra Virgin Olive Oil
Torn sourdough bread, to serve
