BBQ Mandarins with Gin Caramel & Mascarpone

4 Imperial Mandarins
Bertolli Light in Taste Olive Oil Spray
Mascarpone to serve

To make the Gin Caramel:
260g Caster Sugar
90g Butter cubed
125ml Thickened Cream
¼ Cup Gin
½ Tsp Sea Salt

METHOD

STEP 1

To make gin caramel, add sugar to a medium heavy-based saucepan.

STEP 2

Stir constantly until sugar has completely dissolved then remove from heat.

STEP 3

Whisk in butter (be careful as it will spit) then pour in thickened cream in a slow steady stream, whisking constantly. Whisk in the gin and salt.

STEP 4

Heat a BBQ grill plate to high heat. Cut mandarins in half horizontally and spray the cut surfaces of the mandarins with Bertolli Light in Taste Olive Oil Spray.

STEP 5

Grill mandarins cut side down for 2-3 minutes until warmed through.

STEP 6

Serve two halves with a generous dollop of mascarpone and drizzled with gin caramel.
