Salsa Verdamole

Serves: 6-8 as a snack

700g green tomatoes
2 cloves garlic
Bertolli Organic Extra Virgin Olive Oil
½ small brown onion, roughly chopped
½ bunch coriander leaves
Juice of ½ lime
1 jalapeno, roughly chopped
½ large avocado
Sea salt
Corn chips, to serve

METHOD

STEP 1

Preheat oven grill to high.

STEP 2

Place tomatoes and garlic on a baking tray, spray with Bertolli Organic Extra Virgin Olive Oil then grill for 8-10 mins until they begin to blister and caramelise.

STEP 3

Combine onion, coriander, lime juice, jalapenos, avocado and grilled tomatoes in a blender. Peel the garlic cloves and add to the blender then blitz until smooth.

STEP 4

Serve with corn chips.
