Shaved Brussels with Bacon and Balsamic Dressing

Serves 6-8 as a side

500g brussels sprouts, finely sliced (a mandolin is a quick way to do this)
6 slices streaky bacon, finely chopped

BALSAMIC DRESSING
125ml Bertolli Organic Extra Virgin Olive Oil Fruity
3 tbsp Bertolli Organic Balsamic Vinegar
1 tbsp Dijon mustard
1 clove garlic, finely chopped
Sea salt and freshly cracked black pepper

METHOD

STEP 1

Pile shaved Brussels sprouts into a large bowl.

STEP 2

Place chopped bacon into a cold frypan then turn on heat to high and fry, stirring regularly, until crispy. Drain on paper towel then sprinkle over the sprouts.

STEP 3

To make dressing, combine all ingredients in a clean jar/container with lid. Shake well. Drizzle over the salad just before serving.
