Peach, Macadamia and Chia Polenta Slice

Makes 12

200g dried peach
Fine zest from 1 lemon
80ml lemon juice
60ml honey
160g macadamia nuts, processed to a fine meal
90g instant polenta
60g caster sugar
40g desiccated coconut
1 tsp baking powder
125ml buttermilk
100ml Bertolli Gentile olive oil
¼ cup white chia seeds

METHOD

STEP 1

Preheat oven to 180ºC (160ºC fan). Grease a 16x26cm slice pan and line with baking paper.

STEP 2

Combine peaches, lemon zest, juice and honey in a small saucepan. Bring to a boil, reduce heat and allow to simmer 5 mins until peaches become soft.

STEP 3

Transfer peaches and juice to a food processor, blend until almost smooth. Add macadamia meal, polenta, sugar, coconut, baking powder, buttermilk, oil and chia seeds. Process until just combined.

STEP 4

Pour mixture into tray and bake for 20-25 mins or until golden and cooked through. Allow to cool completely in pan before removing and cutting into 12 squares.
