Macadamia and Hemp Seed Pesto Pasta

Serves 2

100g Macadamia Nuts roasted
2 ½ Tbsp Hemp Seeds
2 Tbsp Nutritional Yeast
1 Garlic clove
1 bunch Basil Leaves
250ml Bertolli Organic Extra Virgin Olive Oil
1 x packet planet-based pasta (Chickpea Fettucine or Red Lentil Penne works a treat!)
4 spears Asparagus, shaved
½ Cup Peas

METHOD

STEP 1

In a mini food processor combine macadamia nuts, hemp seeds, nutritional yeast, garlic and basil leaves.

STEP 2

Pulse the mixture until the leaves are roughly chopped and the mixture resembled breadcrumbs.

STEP 3

Pulsing the food processor, add Bertolli Organic Extra Virgin Olive Oil in a thin stream until all incorporated.

STEP 4

Prepare planet-based pasta according to packet instructions. Drain, add pesto and toss to coat.

STEP 5

Blanch asparagus and peas in a bowl of boiling water, drain and toss through the pasta to serve.
