Serves 6 as a snack
125ml Bertolli Originale Olive Oil
80ml white vinegar
3 cloves garlic, crushed
1 tsp chilli flakes
¼ cup finely chopped flat leaf parsley
Finely grated zest of 1 lemon
500g peeled and deveined green (raw) prawns, tail on
In a large bowl whisk together oil, vinegar, garlic, chilli flakes, parsley, lemon and a pinch of sea salt.
Bring a large saucepan of heavily salted water to the boil. Once boiling, add prawns and cook until opaque and just cooked through. Drain and add warm prawns to the marinate, stirring to coat the prawns. Cover and refrigerate overnight to marinate.
Serve the marinated prawns cold with crusty bread.
