Garlic Bread Strata

Serves 6 a side

Bertolli Olive Oil Spray
2 tbsp Bertolli Organic Extra Virgin Olive Oil
1 brown onion, peeled, finely chopped
270g store-bought garlic bread slices
150g grated Gruyere cheese (substitute Tasty cheese)
8 eggs
375ml milk
375ml thickened cream
¼ cup chopped parsley, plus extra leaves to serve
1/3 cup grated parmesan
Sea salt and freshly cracked black pepper

METHOD

STEP 1

Preheat a fan forced oven to 160ºC. Spray a 20cm square oven-safe dish with oil.

STEP 2

Heat 2 tbsp oil in a large frypan over medium heat. Add onion and fry until softened and golden.

STEP 3

Cut garlic bread slices into quarters, spread ½ into the base of the prepared dish, then sprinkle over half the onion and half the cheese. Repeat.

STEP 4

Whisk together eggs, milk, cream and parsley. Season generously then pour over the bread mixture. Allow to sit for 30 mins for bread to soak up the egg mixture.

STEP 5

Sprinkle with parmesan then bake for 60 mins or until golden on top and egg is set. Sprinkle with parsley leaves, to serve.
