Fuji Apple Waffles

Makes 4 Large Waffles

3 Fuji apples, peeled, cored and thinly sliced
Juice of ½ lemon
375ml water
55g brown sugar
55g cup caster sugar
40g cornflour
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp butter

WAFFLE BATTER
300g plain flour
500ml milk
60ml Bertolli Organic Extra Virgin Olive Oil Fruity
2 tsp baking powder
1 pinch of salt
Bertolli Organic Extra Virgin Olive Oil Spray

METHOD

STEP 1

To make the apple filling, drizzle the lemon juice over the apple slices.

STEP 2

Place the water, brown sugar, caster sugar, cornflour, cinnamon and nutmeg in a large pan. Bring to a simmer, stirring occasionally. Bring the mixture to a boil and cook for 1 minute or until just thickened.

STEP 3

Add the apples to the pan and stir to coat with the sauce. Lower the heat to medium and cook until the apples have softened, about 10 minutes.

STEP 4

Add the butter to the pan and stir until it has melted. Allow the apple filling to cool slightly while you prepare the waffle batter.

STEP 5

To make the waffle batter, combine the dry ingredients in a large bowl. Mix well.

STEP 6

Mix together the wet ingredients, add to the dry ingredients and whisk the mixture by hand until it forms into a smooth batter. Fold through half of the apple filling.

STEP 7

Spray waffle maker with Bertolli Organic Extra Virgin Olive Oil Spray, spoon batter into the preheated waffle maker and cook until golden and crispy.

STEP 8

Repeat with remaining batter then serve with extra apple filling. Also lovely with a generous scoop of vanilla ice cream.
