Farfalle Aglio e Olio (Garlic and Oil) with Broccolini and Crispy Sage Breadcrumbs

Serves: 4-6

1 x 500g packet farfalle pasta
2 bunches broccolini, washed, ends trimmed,
chopped into 2cm lengths
½ cup Bertolli Extra Virgin Olive Oil Originale
8 plump garlic cloves, very thinly sliced
½ tsp chili flakes
¼ cup nutritional yeast (optional)
1 tsp white miso paste (optional)
Sea salt and freshly ground black pepper
1/3 cup Bertolli Extra Virgin Olive Oil Originale
2 small bunches of sage, leaves picked
1 cup fresh breadcrumbs (I used day old sourdough and blitzed it in the food processor)
Sea salt and freshly ground black pepper
Zest of 1 lemon
Vegan parmesan to serve (optional)

METHOD

STEP 1

Cook farfalle in well salted boiling water until al dente. In the last 3 minutes before draining, add in the broccolini. Drain, saving 1 cup of the pasta cooking water.

STEP 2

Warm the Bertolli Originale Olive Oil over a low-medium heat in a wide pan, add the sliced garlic and chili flakes and cook, stirring often, until the garlic is lightly browned, about 5 minutes. Be careful not to cook it past this as the garlic will become bitter. Add ½ cup pasta cooking water, a good pinch of salt and some fresh pepper, the nutritional yeast and miso if using, and the cooked pasta and broccolini. Give it all a good toss over a low heat until you have a silky sauce that clings to the pasta. Add more water if needed to thin, and more salt/pepper/chili to taste.

STEP 3

Serve topped with the crispy sage breadcrumbs and vegan parmesan.

STEP 4

Warm the Bertolli Originale Olive Oil over medium-high heat in a fry pan or large pot, add in the sage leaves and fry for 2-3 minutes until lightly curled and crispy. Remove from the oil and set aside. Add in the breadcrumbs along with a pinch of salt and some fresh pepper, cook for about 3-5 minutes until golden and crispy. Remove from the heat, toss with the lemon zest, more salt and pepper to taste and the crispy sage. Place in a bowl to serve with the pasta.
