Dark Choc T-Tams & Olive Oil Brownies
200g good-quality dark chocolate, chopped
280ml Bertolli Light in Taste Olive Oil
350g demerara sugar
150g plain flour
1x 200g packet Dark Tim Tams, roughly crushed
Sea salt flakes
Preheat a conventional oven to 180°C (160ºC fan). Grease and line a 30x20cm rectangular baking tin.
Combine chocolate and olive oil in a small saucepan over low heat and stir until the chocolate is melted and smooth. Allow to cool slightly.
Place the sugar, eggs and flour in a bowl with the chocolate mixture and mix well. Fold through the crushed Tim Tam pieces and spoon mixture into the prepared tin. Sprinkle with sea salt flakes then bake for 30 mins or until just cooked through. Allow to cool completely in the tin before removing and cutting into 16 squares.
