Cheesy Vegemite and Cauli Quiches
2 tbsp Bertolli Originale Extra Virgin Olive Oil
1 cup store-bought cauliflower rice
12 tbsp grated tasty cheese
6 tbsp thickened cream
2 tbsp Vegemite
Preheat oven to 180ºC (160ºC fan). Line 12 holes of a muffin tin with patty papers.
Heat oil in a small frypan over medium heat. Add cauliflower rice and fry, stirring regularly, until golden. Allow to cool slightly before dividing evenly between 12 patty papers.
Spoon 1 tbsp of grated cheese into each patty paper.
Whisk together the eggs, cream and Vegemite then pour between the patty papers and bake for 25-30 mins until golden and set. Allow to cool for a quick and healthy lunchbox snack.
