Caramelised Onion Pizza Bianco
Makes: 1 Large Pizza
1 x 250g store-bought fresh pizza dough ball
60ml Bertolli Classic Olive Oil
8 spring onions, white and pale green sections only, cut into 1 inch batons
½ cup grated cheese (pizza blend)
¼ cup soft ricotta cheese
Sea salt flakes and freshly cracked black pepper
Prepare pizza dough according to packet instructions. Stretch out to about 25-30cm in diameter.
Heat Bertolli Classic Olive Oil in a large frypan over low-medium heat. Add spring onions and saute, stirring occasionally, for 12-15 mins until softened and the onions begin to turn a light golden colour.
Preheat a pizza oven to high or traditional oven (with baking tray preheated inside) to 250ºC.
Mix together the grated cheeses and ricotta. Season with salt and pepper.
Carefully place the base onto the pizza oven (if using a preheated tray in the oven, line it with baking paper before placing the base on top). Brush the base with the oil from the sautéed spring onions, then spread with the cheese mixture. Sprinkle the caramelised spring onions on top, season then cook in pizza oven for 3-4 mins (or traditional oven for 10-15 mins) until the base is crispy and puffy and the cheese is golden. Serve immediately.
