Bircher Muesli with Organic Olive Oil Baked Citrus
You will need to begin this recipe the night before
250ml full cream milk
100g double thick cream
25g natural yoghurt
125g rolled oats
75ml orange juice
35ml golden syrup
25g hazelnuts, roughly chopped
1 green apple, diced
6 citrus (we used navel oranges, blood oranges and mandarins)
Bertolli Organic Gentile Extra Virgin Olive Oil
Demerara sugar, to sprinkle
In a large bowl combine milk, thickened cream, natural yoghurt, rolled oats, orange juice, golden syrup, sultanas, hazelnut and apple. Mix well then refrigerate overnight.
When ready to serve, preheat oven to 200ºC. Cut the citrus in half, arrange in a baking tray, cut side up. Drizzle with Bertolli Organic Gentile Extra Virgin Olive Oil then sprinkle with Demerara sugar before baking for 20-25 mins until softened and puffy.
Serve bircher muesli topped with warm, baked citrus.
