BBQ Beer Can Chicken

Roasting a chicken on a BBQ gives a lovely, smokey flavour but if you don’t have a BBQ big enough you can also use this same method in an oven.

1.5kg whole chicken
125ml Bertolli Originale Olive Oil
2 tbsp finely chopped fresh oregano
2 cloves garlic, crushed
2 tsp smoked paprika
2 tsp fine sea salt
1 tsp onion powder
Freshly cracked black pepper
375ml can of beer

METHOD

STEP 1

In a bowl combine olive oil, oregano, garlic, spices, salt and a healthy dose of freshly cracked black pepper. Whisk together and rub all over the chicken. Cover and marinate in the fridge overnight.

STEP 2

Preheat a BBQ to medium (around 200ºC if your BBQ has a thermometer). Place a baking rack on top of a baking tray and place onto the BBQ. Empty a can of beer until half full then place the marinated chicken over the can. Place on top of the baking rack, close BBQ lid and roast chicken for around 1 hour or until juices run clear. Allow chicken to rest for 10 mins before carving.
