Banana Mug Cake with Dulce de Leche
Bertolli Organic Extra Virgin Olive Oil Spray
3 tbsp plain flour
1 tbsp caster sugar
1 tbsp brown sugar
Large pinch baking powder
Large pinch bicarbonate of soda
1 tbsp Bertolli Light In Taste Olive Oil
2 tbsp store bought Dulce de Leche (substitute thick caramel sauce)
1 medium sized, ripe banana, mashed
Roughly chopped walnuts
Spray the inside of a large, microwave safe mug with Bertolli Extra Virgin Organic Spray.
Add flour, both sugars, baking powder, bicarbonate of soda and a pinch of salt. Whisk with a fork. Whisk in the egg and Bertolli Light In Taste Olive Oil then add banana and walnuts and stir well. Spoon 1 tbsp Dulce de Leche on top of the batter and sprinkle with a little extra sea salt. Microwave for 90 seconds to 3 mins (times will vary depending on your microwave) until the cake is cooked through. Serve with another spoonful of Dulce de Leche and a little extra sprinkle of walnuts.
